Ingredients
4 slices of bacon, chopped
2 large egg yolks
2 cloves of garlic, minced
1 tablespoon Dijon mustard (optional)
1 tablespoon lemon juice
1 cup olive oil
Salt and pepper to taste
Instructions
Cook the Bacon:
Fry the chopped bacon in a skillet over medium heat until crispy. Remove from the skillet and place on paper towels to drain excess grease. Set aside.Prepare the Aioli Base:
In a bowl, whisk together the egg yolks, minced garlic, Dijon mustard (if using), and lemon juice.Emulsify the Sauce:
Slowly drizzle in the olive oil, whisking constantly to emulsify the mixture. Continue whisking until the aioli becomes thick and creamy.Add the Bacon:
Stir in the crispy bacon pieces into the aioli. Season with salt and pepper to taste.Chill:
Cover and refrigerate the bacon aioli for at least 30 minutes before serving to allow the flavors to meld together.
Notes
You can use turkey bacon for a lighter version of this recipe.
If the aioli is too thick, you can thin it with a teaspoon of warm water until you reach the desired consistency.
For a spicier variation, add a pinch of cayenne pepper or a few drops of hot sauce.
