Ingredients

  • 4 slices of bacon, chopped

  • 2 large egg yolks

  • 2 cloves of garlic, minced

  • 1 tablespoon Dijon mustard (optional)

  • 1 tablespoon lemon juice

  • 1 cup olive oil

  • Salt and pepper to taste

Instructions

  1. Cook the Bacon:
    Fry the chopped bacon in a skillet over medium heat until crispy. Remove from the skillet and place on paper towels to drain excess grease. Set aside.

  2. Prepare the Aioli Base:
    In a bowl, whisk together the egg yolks, minced garlic, Dijon mustard (if using), and lemon juice.

  3. Emulsify the Sauce:
    Slowly drizzle in the olive oil, whisking constantly to emulsify the mixture. Continue whisking until the aioli becomes thick and creamy.

  4. Add the Bacon:
    Stir in the crispy bacon pieces into the aioli. Season with salt and pepper to taste.

  5. Chill:

Notes

  • You can use turkey bacon for a lighter version of this recipe.
