Instructions

Preheat the oven to 350°F (175°C). Grease and flour a loaf pan (or line with parchment paper).

Mash the bananas in a bowl until smooth with some small lumps remaining. Set aside.

In a separate bowl, whisk together the flour, baking soda, and salt. Set aside.

In a large mixing bowl, cream together the butter and sugar until light and fluffy. You can use an electric mixer or do it by hand.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients into the wet ingredients, alternating with the mashed bananas and buttermilk, until everything is just combined. Do not overmix.

Pour the batter into the prepared loaf pan and smooth the top with a spatula.
