  • 2 ripe bananas, mashed

  • 1 1/2 cups all-purpose flour (can substitute with whole wheat flour for a healthier option)

  • 1/2 cup sugar (granulated or brown sugar)

  • 1/2 cup chocolate chunks (milk, dark, or white chocolate)

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1 large egg

  • 1/4 cup melted butter (can substitute with non-dairy butter for vegan option)

  • 1 tsp vanilla extract

  • Pinch of salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

  2. In a large mixing bowl, combine the flour, baking powder, baking soda, and salt (if using).

  3. In another bowl, mash the ripe bananas until smooth.

  4. Add the sugar, egg, melted butter, and vanilla extract to the mashed bananas, and mix until well combined.

  5. Gradually add the wet mixture to the dry ingredients and stir until just combined.

  6. Gently fold in the chocolate chunks.

  7. Spoon the batter into the muffin cups, filling each about 2/3 full.

  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

  9. Let the muffins cool for 5 minutes in the tin before transferring them to a wire rack to cool completely.

Notes

  • For a richer taste, use brown sugar instead of granulated sugar.

  • Feel free to substitute some or all of the all-purpose flour with whole wheat flour for a healthier alternative.
