Ingredients
-
1 rack of lamb (about 8 ribs), French-trimmed
-
2 tbsp olive oil
-
3 cloves garlic, minced
-
2 tbsp fresh rosemary, chopped
-
1 tbsp fresh thyme, chopped
-
1 tbsp Dijon mustard
-
Zest of 1 lemon
-
Salt and pepper, to taste
-
1 tbsp honey (optional for glaze)
-
1/4 cup balsamic vinegar (optional for glaze)
Instructions
-
Prepare the Marinade: In a bowl, combine olive oil, minced garlic, rosemary, thyme, Dijon mustard, lemon zest, salt, and pepper. Mix well to create the marinade.
-
Marinate the Lamb: Rub the marinade all over the rack of lamb, making sure to coat the meat evenly. Cover and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to infuse.
-
Preheat the Grill: Preheat your grill to medium-high heat (about 375°F).
-
Grill the Lamb: Place the lamb rack on the grill over indirect heat. Close the lid and cook for about 15-20 minutes for medium-rare, or longer if you prefer it more well-done.
-
Sear the Lamb: For a crispy exterior, move the lamb over direct heat for the last 3-4 minutes of grilling.
-
Rest the Lamb: Remove the lamb from the grill and allow it to rest for 10 minutes before slicing to retain its juices.
-
Optional Glaze: For an added glaze, combine honey and balsamic vinegar, then brush it onto the lamb during the final moments of grilling.
-
Serve: Slice the rack between the bones into individual chops and serve with your favorite sides.
Notes
-
Cooking Time: Grill times may vary based on the thickness of the rack and your preferred level of doneness. Use a meat thermometer for accuracy.
-
Resting Time: Let the lamb rest for at least 10 minutes after grilling to preserve the juices.
-
Serving Suggestion: This dish pairs well with mashed potatoes, roasted vegetables, and a fresh salad.
-
Glazing Option: Adding a glaze made of honey and balsamic vinegar enhances the flavor with a touch of sweetness and tang.
