Ingredients
1 cup cauliflower rice
4 oz grilled lamb (or chicken, if preferred)
1/4 cucumber, sliced
1/4 cup cherry tomatoes, halved
2 tbsp Kalamata olives, pitted
1/4 red onion, thinly sliced
2 tbsp tzatziki sauce
1 tsp olive oil (optional for grilling)
Salt and pepper to taste
Instructions
Prepare the Cauliflower Rice: Heat a non-stick skillet over medium heat. Add the cauliflower rice and cook for 5-7 minutes until tender. Season with salt and pepper.
Grill the Lamb: Season the lamb with salt, pepper, and olive oil. Grill on medium-high heat for 4-5 minutes on each side or until cooked to desired doneness. Slice the grilled lamb into strips.
Assemble the Bowl: In a serving bowl, layer the cauliflower rice at the base. Top with grilled lamb, cucumber slices, cherry tomatoes, Kalamata olives, and red onion.
Add Tzatziki: Drizzle the tzatziki sauce over the top and garnish with extra herbs or lemon wedges if desired.
