- 4 pita breads
- 1 pickle, sliced
- 4 slices vegan hard-boiled eggs (optional)
- 1 cup Shirazi salad (tomatoes, cucumber, onion, and mint)
- 1 cup hummus
- ½ cup tahini sauce
- ¼ cup zhoug sauce (optional)
- ¼ cup amba sauce (optional)
Instructions
- Prepare the Eggplant: Sprinkle the eggplant slices with salt and set them in a colander for 30 minutes to draw out moisture.
- Cook the Eggplant: You can either fry or roast the eggplant. For frying, heat olive oil in a skillet over medium heat and cook the eggplant slices for 4-5 minutes on each side until golden and tender. For roasting, preheat the oven to 425°F (220°C), arrange eggplant on a parchment-lined baking sheet, brush with olive oil, and roast for 25 minutes, flipping halfway.
- Spice the Eggplant: After cooking, sprinkle the eggplant slices with smoked paprika and za’atar for added flavor.
- Warm the Pita: Warm the pita bread in a pan or over an open flame to make it soft and pliable.
- Assemble the Sandwich: Spread hummus inside the pita, then layer with roasted eggplant, pickle slices, Shirazi salad, and vegan egg slices (if using). Drizzle with tahini sauce, zhoug, and amba if desired.
- Serve and Enjoy: Fold the pita around the filling and serve immediately.
Notes
Salting the eggplant is crucial to removing bitterness and improving its texture. Don’t skip this step—salting and draining the eggplant ensures that it’s both creamy inside and crispy on the outside.
