1 lb lamb shoulder or leg, boneless and trimmed
2 tbsp olive oil
2 tbsp Greek seasoning (oregano, thyme, garlic powder, onion powder, cinnamon)
2 tbsp lemon juice
2 garlic cloves, minced
4 soft flour tortillas or corn taco shells
1 cup fresh cucumber, diced
1 cup cherry tomatoes, halved
1 cup lettuce, shredded
½ red onion, thinly sliced
½ cup tzatziki sauce (store-bought or homemade)
Fresh parsley, for garnish (optional)
Instructions
Prepare the Lamb: In a bowl, combine olive oil, Greek seasoning, lemon juice, and minced garlic. Coat the lamb with the marinade and let it sit for at least 30 minutes, preferably overnight.
Cook the Lamb: Preheat a grill or skillet over medium-high heat. Grill the lamb for about 5-7 minutes per side or until the internal temperature reaches 145°F for medium-rare. Let the lamb rest for 5 minutes, then slice it thinly against the grain.
Prepare the Tacos: Warm the tortillas or taco shells in a dry skillet or oven for a few minutes. Place the warm tortillas on a serving platter.
Assemble the Tacos: Add the sliced lamb to each tortilla. Top with diced cucumbers, halved cherry tomatoes, shredded lettuce, and red onion slices. Drizzle generously with tzatziki sauce.
Garnish and Serve: Garnish with fresh parsley and serve immediately.
Notes
Lamb Substitute: If you prefer not to use lamb, you can substitute with chicken, beef, or even a plant-based protein such as grilled mushrooms or tofu.
Make Ahead: You can marinate the lamb ahead of time (overnight is best) to infuse more flavor.
Tzatziki Sauce: Homemade tzatziki can be made by mixing Greek yogurt with grated cucumber, garlic, lemon juice, olive oil, and fresh dill. Alternatively, you can use store-bought tzatziki for convenience.
