Ingredients
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
3 cloves garlic, minced
1 tbsp lemon juice (freshly squeezed)
1 tsp lemon zest
1 tsp smoked paprika
1/2 tsp red pepper flakes (optional for heat)
Salt and pepper, to taste
8–10 wooden or metal skewers
Fresh parsley for garnish
Lemon wedges (for serving)
Dipping sauce (optional, e.g., garlic butter or cocktail sauce)
Instructions
Prepare the Marinade: In a bowl, combine olive oil, minced garlic, lemon juice, lemon zest, smoked paprika, red pepper flakes (if using), salt, and pepper.
Marinate the Shrimp: Place the shrimp in a shallow dish or a resealable plastic bag. Pour the marinade over the shrimp and toss to coat evenly. Cover and refrigerate for 15-30 minutes (do not marinate for more than 1 hour).
Skewer the Shrimp: If using wooden skewers, soak them in water for at least 30 minutes before use. Thread the shrimp onto the skewers, piercing through the thickest part for stability.
Preheat the Grill: Preheat your grill to medium-high heat (about 375°F or 190°C).
Grill the Shrimp: Place the shrimp skewers on the grill. Grill each side for 2-3 minutes, or until the shrimp turn pink and opaque. Be careful not to overcook.
Serve: Remove the shrimp from the skewers and arrange them on a plate. Garnish with fresh parsley and serve with lemon wedges and your favorite dipping sauce.
Notes
Shrimp Size: Large shrimp (16-20 per pound) work best for grilling. Adjust the cooking time depending on the size of your shrimp.
Dipping Sauce: You can serve these skewers with garlic butter, cocktail sauce, or a spicy aioli.
Make Ahead: You can marinate the shrimp up to 1 hour ahead of time for maximum flavor. For best results, skewer the shrimp just before grilling.
