Ingredients
- 2 lbs (900g) beef stew meat (chuck roast)
- 4 large carrots, chopped
- 4 medium potatoes, diced
- 1 large onion, chopped
- 4 cups (960ml) beef broth
- 1 tbsp olive oil (for browning the beef)
- 2 tsp garlic powder
- 1 tsp thyme
- 2 bay leaves
- Salt and pepper to taste

Optional Ingredients for Extra Flavor:
- 1/2 cup (120ml) red wine
- 2 tbsp tomato paste
- 1 cup mushrooms, sliced
- 2 medium parsnips, diced

Instructions
- Brown the Beef:
Turn the Instant Pot to sauté mode, add olive oil, and brown the beef stew meat in batches. Remove the browned beef and set aside.
- Add Vegetables and Seasonings:
Add chopped carrots, potatoes, onions, and garlic powder to the Instant Pot. Add thyme, bay leaves, salt, and pepper. Stir to combine.
- Add Broth and Liquid:
Pour in the beef broth and any optional ingredients, such as red wine or tomato paste. Stir everything together.
- Pressure Cook:
Close the Instant Pot lid and set it to high pressure for 30 minutes. Ensure the pressure valve is set to sealing.
- Release Pressure:
Once the cooking time is up, let the pressure release naturally for 10-15 minutes, then carefully turn the valve to venting to release any remaining pressure.
- Serve and Enjoy:
Open the lid, remove the bay leaves, and stir the stew. Serve the Instant Pot beef stew with crusty bread or mashed potatoes.
Notes
- Frozen Beef: You can use frozen beef for this stew, but it may take a little longer for the Instant Pot to reach pressure. Add 5-10 extra minutes to the cooking time.
- Leftovers: This stew tastes even better the next day, and leftovers can be stored in an airtight container for up to 3 days in the fridge. It also freezes well for longer storage.
- Spicy Option: Add chili flakes, cayenne pepper, or jalapeños for a spicy kick.
