Ingredients

    • 2 lbs (900g) beef stew meat (chuck roast)

    • 4 large carrots, chopped

    • 4 medium potatoes, diced

    • 1 large onion, chopped

    • 4 cups (960ml) beef broth

    • 1 tbsp olive oil (for browning the beef)

    • 2 tsp garlic powder

    • 1 tsp thyme

    • 2 bay leaves

    • Salt and pepper to taste

    • 1/2 cup (120ml) red wine

    • 2 tbsp tomato paste

    • 1 cup mushrooms, sliced

    • 2 medium parsnips, diced

Instructions

  • Brown the Beef:
    Turn the Instant Pot to sauté mode, add olive oil, and brown the beef stew meat in batches. Remove the browned beef and set aside.

  • Add Vegetables and Seasonings:
    Add chopped carrots, potatoes, onions, and garlic powder to the Instant Pot. Add thyme, bay leaves, salt, and pepper. Stir to combine.

  • Add Broth and Liquid:
    Pour in the beef broth and any optional ingredients, such as red wine or tomato paste. Stir everything together.

  • Pressure Cook:
    Close the Instant Pot lid and set it to high pressure for 30 minutes. Ensure the pressure valve is set to sealing.

  • Release Pressure:
    Once the cooking time is up, let the pressure release naturally for 10-15 minutes, then carefully turn the valve to venting to release any remaining pressure.

  • Frozen Beef: You can use frozen beef for this stew, but it may take a little longer for the Instant Pot to reach pressure. Add 5-10 extra minutes to the cooking time.
