Ingredients
1 lb ground beef (or chicken for a lighter option)
10 corn tortillas (or flour tortillas for a softer texture)
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup sour cream (optional, for creaminess)
1 cup salsa (mild or spicy, depending on preference)
1 packet taco seasoning (or homemade)
1 small onion, finely chopped
2 cloves garlic, minced
1 can diced tomatoes (optional, for extra moisture)
Fresh cilantro, chopped (for garnish)
Jalapeños, chopped (optional for extra heat)
Instructions
Preheat the oven to 375°F (190°C).
In a large skillet, brown the ground beef over medium heat. Add chopped onions and garlic, and cook until softened. Drain excess fat.
Stir in the taco seasoning and salsa (and diced tomatoes if using). Simmer for 5 minutes.
In a greased 9×13 baking dish, layer the tortillas. Spread a layer of meat mixture, followed by a sprinkle of cheddar and mozzarella cheese. Repeat the layers until you run out of ingredients, finishing with cheese on top.
Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until cheese is melted and bubbly.
Garnish with fresh cilantro, sour cream, and optional jalapeños. Let rest for 5 minutes before serving.
Notes
You can use ground turkey or tofu for a healthier or vegetarian alternative.
If you prefer a spicier lasagna, add more chili powder or use a spicy salsa.
This dish can be made ahead and stored in the fridge for up to 3 days or frozen for up to 2 months.
