Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
In a medium-sized bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, ginger, and salt. Set aside.
In a large mixing bowl, combine the sugar, pumpkin puree, eggs, and vegetable oil. Mix well until smooth.
Gradually add the dry ingredients into the wet ingredients, mixing just until incorporated. Avoid overmixing.
Pour the batter into the prepared cake pan and smooth the top.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Frost with cream cheese frosting (or your preferred frosting) and serve.
Notes
For an extra moist cake, you can substitute sour cream or buttermilk for some of the oil.
You can also add chocolate chips or chopped nuts to the batter for added texture.
If you don’t have fresh pumpkin puree, canned pumpkin works perfectly fine. Just make sure it’s pure pumpkin and not pumpkin pie filling.
If you’re making cupcakes, reduce the baking time to 20-25 minutes.
