  • 4 large flour tortillas

  • 1/2 cup diced red onions

  • 1/2 cup diced bell peppers (any color)

  • 1/2 cup corn kernels (optional)

  • 1-2 tablespoons taco seasoning (adjust to taste)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Prepare the filling: In a large bowl, combine the shredded chicken, diced bell peppers, onions, corn, and black beans (if using). Add the taco seasoning, lime juice, and olive oil. Stir everything together until evenly mixed.

  3. Assemble the quesadillas: Lay two tortillas flat on a baking sheet. Sprinkle cheese over the tortillas, followed by the prepared filling. Top with another layer of cheese and then cover with the remaining tortillas to form a sandwich.

  4. Bake the quesadillas: Place the sheet pan in the oven and bake for 10-12 minutes, or until the tortillas are golden brown and crispy, and the cheese is fully melted.
