  • 2 large eggs
  • 1/2 cup (120ml) vegetable oil (or any neutral oil)
  • 1 cup (240ml) whole milk (or buttermilk for extra moisture)
  • 1 teaspoon vanilla extract
  • 1/2 cup (120g) sour cream (for moisture and richness)
  • 1 cup (240ml) boiling water (for a moist and tender crumb)
  • 1/2 cup (120ml) hot brewed coffee (optional, enhances chocolate flavor)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the flour, baking powder, baking soda, salt, and cocoa powder.
  3. In a separate bowl, whisk together the sugar, brown sugar, eggs, oil, milk, vanilla extract, and sour cream until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Slowly add the boiling water (and coffee if using) to the batter, mixing until smooth.
  6. Pour the batter into a greased and floured cake pan.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool completely before frosting.

Notes

For extra moisture, you can use buttermilk instead of regular milk, and adding coffee brings out the richness of the chocolate.
