Ingredients
- 1 lb ground beef (or chicken for a lighter option) 
- 10 corn tortillas (or flour tortillas for a softer texture) 
- 2 cups shredded cheddar cheese 
- 1 cup shredded mozzarella cheese 
- 1 cup sour cream (optional, for creaminess) 
- 1 cup salsa (mild or spicy, depending on preference) 
- 1 packet taco seasoning (or homemade) 
- 1 small onion, finely chopped 
- 2 cloves garlic, minced 
- 1 can diced tomatoes (optional, for extra moisture) 
- Fresh cilantro, chopped (for garnish) 
- Jalapeños, chopped (optional for extra heat) 
Instructions
- Preheat the oven to 375°F (190°C). 
- In a large skillet, brown the ground beef over medium heat. Add chopped onions and garlic, and cook until softened. Drain excess fat. 
- Stir in the taco seasoning and salsa (and diced tomatoes if using). Simmer for 5 minutes. 
- In a greased 9×13 baking dish, layer the tortillas. Spread a layer of meat mixture, followed by a sprinkle of cheddar and mozzarella cheese. Repeat the layers until you run out of ingredients, finishing with cheese on top. 
- Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until cheese is melted and bubbly. 
- Garnish with fresh cilantro, sour cream, and optional jalapeños. Let rest for 5 minutes before serving. 
Notes
- You can use ground turkey or tofu for a healthier or vegetarian alternative. 
- If you prefer a spicier lasagna, add more chili powder or use a spicy salsa. 
- This dish can be made ahead and stored in the fridge for up to 3 days or frozen for up to 2 months.
